Sir,

Our reply to these questions is pretty much the same, no matter what type of restaurant is being discussed. We start with the key tools in a restaurant business:

PLANNING YOUR RESTAURANT BUSINESS START UP RIGHT NOW. There are courses you can, and should, take to learn the restaurant business. In addition, take a few hours to go through the questions, checklists and worksheets in this workbook. Find out NOW what you do and don not know, and fix it before opening. |

There is just so much to learn about the restaurant business, especially the "business" side of the business. Here are several tips -- try some of these before opening your restaurant.
1. Go get a job in a restaurant similar to yours, one that won't be a competitor to yours. Learn everything you can. Try for an assistant manager or night manager position. Heck, offer to mop the floors in exchange for tips from the owner. Most business owners will be glad to help a newcomer (as long as you are not a competitor).
2. Find out what you do -- and do not -- already know about restaurant planning. Work your way through the START UP RIGHT NOW business plan workbook (see above). You may discover you already know a lot, and that will be great. But there may be some blank spots in your knowledge as well -- that is very common. Whatever the blank spots are, fix them now, before opening your doors, because you will never have time later.
3. Figure out your financing. If you will need outside financing, decide how you are going to get it. Review one of the restaurant business plans (see above) for guidance on how to write your business plan to raise financing.
4. Another alternative might be to partner with someone who has restaurant planning and management experience. However you do it, both the cooking side and the restaurant planning and management side need to be covered.
Cooking is certainly the cornerstone of a good restaurant. Without it, the restaurant will never succeed, no matter how much money is put behind it.
But restaurants also have one of the highest failure rates among all businesses. That is because many fine chefs know how to cook, but they don't know about restaurant planning and management. For most first time entrepreneurs, it is the management angle that trips them up. You can beat the odds by taking the time to research and learn the ropes, just like you are doing now.
