Nearly everyone thinks they can bake.  But it takes a lot more than kitchen talent to operate a successful bakery, no matter what its size.  Marketing and management are right up there on the top of the list as very, very important.

STRONGEST ADVANTAGE

There is absolute magic in a freshly baked loaf of bread.  Or a Mrs. Fields cookie.  Capturing that magic and putting it into your business plan will almost guarantee success.

You need a "hook". something that distinguishes your bakery from all the others.  Creating that hook, and establishing it firmly in the minds of your potential clients is a real challenge.

For instance, there is one bakery across the street that calls itself "Wonderland Bakery".  The cake designs, etc., are created by a 12-year old girl, and Mom does the marketing.  Now THAT's distinguishing your bakery.  But there are lots of other way.  A natural foods type bakery perhaps?  A French pastry bakery?  A sugar-free bakery?  A breakfast bakery?  There are lots and lots of ways.  Find the way that points you in the direction you want to go, then go with it.

Draw the banker into the business.

As in life, you will get more by asking than by telling.  Ask your banker what his/her favorite pie/cake/bread is.  Find a way to "connect" with what that favorite is.

Flaunt any endorsements you may have, whether it is from your son's third grade teacher or the owner of a local restaurant.  Demonstrate how your bakery will meet the needs of your community.

Demonstrate your experience in the bakery business.

The banker is going to be looking for very solid experience.  Give it to her/him.  Adapt this free sample bakery business plan to demonstrate your real talent to the banker.  For instance, include

  • A strong marketing plan
  • A strong personal background in the business
  • Realistic projections
  • Listing of committed new clients, with letters from them if possible
  • Listing of potential new clients

The SBA is probably your best bet.   If you have background with a particular bank, go to that one and see what they say.  Don't be surprised if they turn you down, and if they do just go to your local bank that works with SBA.
