How long it is, and how much information is included, is very dependent on which lender you are approaching. For instance, a loan for $10,000 from your local bank won't take a whole lot of paperwork. Just the basic information in a nice folder will do fine. But if you are looking for hundreds of thousands of dollars from an angel investment group, you will need a lot more paperwork. I would think you would always want to include a resume and a cover letter. Also include some financial information, and some information about your product. Your banker should be able to help you with a lot of the paperwork, or at least tell you what you need.
